Gluten and Wheat- Free Potato Croquettes
These are easy...and really tasty. They will also keep kids occupied for a messy happy hour on Christmas morning.
Ingredients
10 medium sized potatoes
150g Crushed Gluten Free Cornflakes
1 dessertspoon Marigold Veg Bouillon
3 Beaten Eggs
25g Butter
Method
Peel and slice the potatoes and boil in water with the veg bouillon added for 10-15 mins until soft.
Drain and mash, add the butter.
Allow to cool.
Crush the cornflakes by placing them in a freezer bag and rolling them with a rolling pin.
Beat the eggs.
Shape the mashed potato into oblong croquettes about 3 inches in diameter and 2- 3 inches long.
Roll each one in the beaten egg, then in the crushed cornflakes.
Place them on a baking tray.
Cook in a fairly oven- Gas 5, 190 C 375 F for 15-20 mins until brown and crispy.
These are a real Christmas treat, and I won't lie, very addictive. They go very well with turkey, and re-heat nicely. You can also enjoy them cold.
