Kids Chinese Noodles
Ingredients
Rice noodles, broken in to shorter lengths.
1 grated carrot
1 grated courgette
Some finely chopped spinach
Coconut oil
Soy sauce
Method
- Put the noodles in boiling salted water and boil for 5-8 mins, until softened, but not overcooked. They should still have a 'bite'. Drain and leave to one side.
- Melt the coconut oil in a hot pan or wok and add the vegetables. Stir fry the veg for 2-3 minutes.
- Add the noodles.
- Add a dessertspoon of soy sauce and a dessertspoon of water. (These quantities can be tweaked according to taste)
- Stir and serve.
